Easiest Way to Make Tasty Chicken stuffed with spinach and goat cheese
Chicken stuffed with spinach and goat cheese. A simple stuffed chicken breast with spinach, goat cheese and walnuts. As a side I made shiitake, and baby bella mushrooms using the remaining sauce as a gravy. Chicken stuffed with spinach and goat cheese served atop roasted asparagus and drizzled with a cream sauce.
It did take a little long to prepare the dish but well worth the time. I knew I wanted to update my photographs, though, and I wasn't about to waste food, so they got the Spinach and Goat Cheese Stuffed Chicken Breasts for dinner. For stuffing: Combine goat cheese, chopped spinach, cream cheese, garlic, lemon juice, salt, and mix well. You can have Chicken stuffed with spinach and goat cheese using 6 ingredients and 7 steps. - It's 2 tsp of Extra Virgin Olive Oil.
- It's 1 of Garlic clove (minced).
- It's 1/2 bunch of Spinach, hard stems removed.
- Prepare 2 of (6 oz) thick chicken breast, skinless and boneless.
- You need 2 oz of Low-fat goat cheese (crumbled is great).
- It's 1 of Salt and pepper to taste.
Marinate the chicken with coriander powder, red chili powder, turmeric powder, lemon juice, and garam masala. Put spinach into a large salad bowl; top with pine nuts, tomatoes, chicken, avocado, corn kernels, and goat cheese. I also used shaved Parmesan rather than goat cheese, but I think most white cheeses would be delightful with this salad. I also used stone ground mustard since I didn't have the Dijon.
Chicken stuffed with spinach and goat cheese instructions
- Preheat oven 400°F.
- In large skillet cook oil and garlic for 1 minute.
- Add spinach and cook until it wilts and water evaporates. (about 2-4 minutes).
- Season with salt and pepper and transfer to plate. Towel out skillet.
- Remove excess fat from chicken and butterfly cut it. Evenly fill with spinach and cheese. Then seal the chicken.
- Season outside with salt and pepper..
- Transfer to baking dish and cook for 25 min, broil on high for a few minutes before taking out of the oven.
Dredge chicken in flour and brown on all. This goat cheese stuffed chicken is deliciously comforting without being too heavy. It's fancy enough for a dinner party but quick enough for any night.
